Welcome Aboard!!
Back on November 27th I was suspicious about being preggo again.So of course I run to Walgreens to purchase an overly priced pregnancy test.Get home to do one of the things I hate to do most,pee on a stick.Why do they make it so small,where you almost hit your hands every time?Anyways, after all of that I have to wait 2min. to find out the results,UGGHHH!!!!,
NEGATIVE!!
What??????? I had all the signs,sleepy,cranky,flue like symptoms,tender areas ;-)NO PERIOD.
I didn't understand.Something was wrong I thought.Three days later here it comes,not the usual though.Whatever I just noted it in my book.
So here we are over a month later and no period again!So I run to Walgreens AGAIN.This time I bought 2 tests for the price of one.YEAH!! Made me feel a little better.Until I remembered what I had to do with them.:-( Not my favorite part remember?
So I tried not to hit my hand this time........phew,missed. I didn't have to wait that long for the results,this time though I took the 2nd one the next day to make sure it was POSITIVE!!!!

Happy New Year!!!
I hope everyone had a great time celebrating our saviors birthday this past week.We had a blast
with our families.It was a great thing to be able to spend time with them on Christmas Eve and Day.I love this time of year!!
It is hard to believe that another year has gone by so quickly.2011 will be here in a few hours and I wonder how many of you have your New Years resolutions writing down?Or how many of you have decided to just nix it this year cause you never follow it anyways?That would be me.I try ever year to follow my New Years resolution but I never get past the first week :-}

One of my families favorites
Thought I would share a family favorite around here.We call it Captains Chicken or Southwestern Chicken,whichever you prefer.Its actually a Rachel Ray recipe called 30 Minute Southern Classic: Country Captain Chicken. Again it turned out great,and every time I make it,it seems to get easier and better.Here goes......
Ingredients
1 1/2 cups white and wild rice or long grain rice (I buy Uncle Bens)
2/3 cup flour, eyeball it
1 rounded tablespoon sweet paprika
4 pieces, boneless, skinless chicken breast
Salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 tablespoons butter

1 red bell pepper, seeded and chopped
1 medium onion, chopped
2 or 3 large cloves garlic, smashed
1-2 tablespoon curry powder or mild curry paste

1 can diced tomatoes in puree or chunky style crushed tomatoes
1/4 cup golden raisins or currants, a couple of handfuls

Follow direction on box of rice,prepare and set aside.

Combine flour and paprika in a shallow dish. Season chicken with salt and pepper. Cut each chicken breast and thigh in 1/2 on an angle. Coat chicken pieces in paprika seasoned flour. Wash your hands and chicken work surfaces thoroughly.
Heat a large skillet over medium high heat. Add oil to the pan. Brown chicken pieces, 3 minutes on each side, and remove from the skillet. Add butter to the pan, then stir in peppers, onions and garlic. Season the veggies with salt and pepper and saute them 5 to 7 minutes to soften. Add curry, stock, tomatoes and raisins. Slide chicken back into the skillet and simmer over moderate heat for 5 minutes to combine flavors and finish cooking the chicken through. Place skillet on a trivet and serve the chicken from the pan.

Princess D's "New" desk
Today I decided to paint Princess D's desk.We bought this chalkboard paint awhile back and I was going to paint a section on the wall but never got around to it.Well to be honest with you I have moved the school room around 4 or 5 times already this year so it wouldn't have worked out anyways.It looks really good on her desk.She loves it and thats all that matters right?What do you think?
